Quick and easy: Lentil bolognese with spaghetti
Easily one of my favourite lazy dinner ideas! This one’s perfect after a busy workday or when we just can’t be bothered to whip up a pasta sauce or even cook lentils from scratch (not judging you at all becasuse believe it or not, I have days like this too 😅) What's great about this dish is that it’s also flavourful, comforting and nourishing - complete with your dose of greens, protein and lycopene ✨
What you’ll need:
Pasta noodles (used San Remo - Angel Pasta)
3-4 cloves of garlic
1 medium white onion, diced
1-2 cups button mushrooms, sliced
1-3 tomatoes, diced and/or sun-dried tomato
2 canned lentils (used Delmaine), rinsed and drained
1 jar, ready-made tomato sauce
handful of spinach
2 tsp. of paprika
1 tsp. oregano
1/2 tsp. cumin
salt and pepper to taste
1/4 cup vegetable broth
Steps:
Cook the pasta per instructions and set aside. Place the olive oil into a large pan with the garlic and onion. Let this soften then add the mushrooms and cook for 5-10 minutes until soft. Add the herbs; paprika, oregano, salt and cumin and continue to stir everything together. Add the sliced tomatoes, tomato sauce and sun-dried tomatoes if you have it as well. The lentils are already good to go so just add it to the sauce, along with the spinach and simmer for around 5 minutes.
*Optional: You can add vegetable broth to adjust the consistency of your sauce. I like mine a bit thick so I’d usually skip this.
Serve the pasta with your lentil-tomato sauce and add vegan parmesan cheese on top. Garnish with basil leaves to make it cute ;)
