Easy, simple, creamy avocado pasta — honestly one of my go-to pasta brunch especially on days when i’m limited with time but still want something nice and comforting.
Here’s what you’ll need:
1 1/2 ripe avocado
1/2 cup cashews
2 tbsp. lemon juice
1/3 cup olive oil
1/3 cup water
4 cloves garlic, diced
3-4 tbsp. nutritional yeast
large pinch of salt
8-10 cherry tomatoes
button mushrooms
pasta noodles
sun-dried tomatoes
more salt and pepper to taste
How-to:
Cook the pasta according to the pack intstructions. Drain and set aside.
Soak the cashews with hot water for 10 minutes. Doing this makes the sauce even more creamy but you can skip this one if you don’t have much time.
Blend together: 1 avocado, cashews, lemon, olive oil, water, garlic, salt and set aside.
In a pan, drizzle olive oil and add half of the cherry tomatoes and the button mushrooms.
Add the sauce you prepared using the blender.
Add the cooked pasta and mix the sauce and pasta together
Serve with cubed avocados, fresh cherry tomatoes, sun-dried tomatoes and enjoy :)
