' T O F U ' E G G

Been experimenting on my version of SCRAMBLED ‘tofu-egg’ lately and thought it would be best to pair it as well with tempeh ‘bacon’. If you want to learn more about tempeh and ways to marinate it - you can check out this blog For now here’s everything you need to make this at home:
🥓 Tempeh ‘bacon’
1/2 block of tempeh, thinly sliced (used @tonzu.nz )
Marinate with:
1/2 tbsp tamari or soy sauce
1/2 tbsp maple syrup
1/2 tbsp olive oil
1/4 tsp paprika
1/4 tsp cumin
1 tsp liquid smoke (optional - but I reckon you don’t skip this one for the full experience ☺️)
How to: Heat oil in a pan and cook the tempeh ‘bacon’ for 1-2 mins each side.
🍳 ‘Scrambled eggs’
1 block firm tofu, pressed - to remove excess water (used @beansupremefood)
1/2 tsp black Himalayan salt (from @naturallygoodco , bought mine from @thevegangrocerph)
1/2 tsp garlic powder
1/2 tsp cumin
1 tsp nutritional yeast (from @naturallygoodco, bought from @thevegangrocerph)
1/4 tsp turmeric (for color, recommend @farmtofolkph ‘s)
1-2 tbsp water
1/3 onion, sliced
Oil for sautéing
How to:
- Crush tofu with a fork and set aside
- Mix salt, garlic powder, cumin, nutritional yeast, turmeric and water in a small cup and add it to crushed tofu. Mix everything well and make sure the tofu is well-coated.
- Sauté onion in a pan and add the tofu
- Cook the tofu and dada dum ba dum - you are done!! 😊
I happen to have red capsicum in the fridge so thought I’ll just add it in - sautéed this one with the onion before I added the tofu. You can do the same if you want to add veggies 😉
