Recipe time!!

I've thought hard about what recipe should I first share here in my blog, and I reckon this one would be perfect! If you guys have noticed on Instagram, I love quinoa so much and has been using it as a staple ingredient for my salads. Every time I do my meal prep over the weekend, I always end up with some quinoa leftovers and so I thought of how I could incorporate it to my other meals in a whole different level...

Enter quinoa in the sweet world of breakfast! I love this recipe because it only takes me 10 minutes in the morning, given that the quinoa was already prepared over the weekend.

The game-changer about this recipe would be the blueberry milk. If you are feeling bored with the normal cereal-milk/oats-milk routine, or simply want to up your breaky game, then this one is for you!

Ingredients:

  • Cooked quinoa
  • 3/4 cup almond milk
  • 1/4 cup cashews
  • 1 cup blueberries
  • Dash of cinnamon
  • Maple syrup or any sweetener of your choice
  • More berries (for toppings)
  • Pumpkin seeds *Optional
  • Almonds *Optional
  • Cacao nibs *Optional

I intentionally skipped out the measurements for the maple syrup but you can try adding 1 tbsp first and see how you feel about it. Some people prefer it to be too sweet, some even without added sugar, but for my preference - I just like it with a kick of sweetness!

Also, I highly suggest that you don't skip the cashews. It's really key if you want to achieve that very creamy blueberry milk.

Instructions:

Blend together almond milk, blueberries, cashews, cinnamon, and maple syrup.

Pour blueberry milk in cooked quinoa and add desired toppings! I used pumpkin seeds, almonds and cacao nibs for this recipe. The possibilities are endless tho! - You can add more variations of seeds, nuts, or even a gallop of coconut yogurt topped with more berries, yum!!
